Is it a salad? Is it a side dish? It’s the SUPER SNACK!

You can scoop this into a whole wheat pita for lunch, or serve it over baked chicken, or use it as a side for grilled turkey burgers.  The possibilities are endless.


  • 2 cans of black beans, drained and rinsed
  • 1 can of kernel corn, drained
  • ¾ cup of Garden Fresh Gourmet salsa, drained
  • ¼ cup of Olive Oil
  • 3 cloves of minced garlic
  • 2 tablespoons of lemon juice
  • 1 ½ teaspoons cumin
  • ¼ teaspoon ground black pepper
  • Recipe:

    1. Mix all ingredients in a large bowl.
    2. Cover and refrigerate for at least 2 hours. Can refrigerate for up to 3 days.
