I’m so excited today to share a guest recipe from an amazing Dietician, super endurance athlete, and all around awesome human LINDSAY MARTIN! She was kind enough to give me a sample of her Cashew Coconut Butter and I had to use all of my cool points to stay calm and not stalk her for the recipe. Believe me, this stuff is delicious!
CASHEW COCONUT BUTTER
3 cups Cashews, roasted and salted
14-16 T. Coconut oil ( I use a little less than 1 full cup)
1 T. Agave nectar, honey or maple syrup
• First, add coconut oil to your vitamix, ninja or food processor.
• Second, add the cashews.
• Pulse the mixture, scraping down the sides when needed, until mostly blended.
• Last, add agave nectar and blend until smooth or until desired consistency.
Number of servings: 32
Serving size: 1.5 T
130 calories, 2 gm protein, 12 gm fat, 5 gm carbohydrate, 0 gm fiber, 80 mg sodium
